I use all sorts of things. I use left over fruit, frozen fruit and even tinned fruit, or a combination of all of the above.

If you live out in the country, you can always go picking seasonal fruit, and I mean the free ones, like blackberries, and blueberries. Using shop bought, out of season fruit can make the ice cream more expensive.

But I do find frozen and tinned fruit work really great. Remember you can buy fruit in season when it's really cheap and freeze it yourself. Here are some other tips for making sure you get great ice cream.

  1. Don't ever re freeze once it has defrosted. It can make you unwell.
  2. The use of an electric maker can cut down on labor. If you are going to make ice cream regularly then its worth reviewing a selection of electric machines and considering investing in one.
  3. Remember, your home made version will not (fortunately) have preservatives or additives in it like you are used to with commercial ones. This means it won't last as long so try to eat within a week or 10 days.
  4. Don't serve too cold, you'll get a headache! So leave out of the freezer for 10-15 minutes before eating.
  5. Freeze all left over chocolate and chocolate sweets (you can use these when you want to make a choc flavour.
